I found this recipe on Facebook posted by a friend. Thought I would give it a try. It is called Refrigerator Jam.

It turned out very flavorable. The only thing I would do different is to mix it more in my Nutribullet to break down the seeds of the strawberries. I didn’t want to break down the Chia seeds incase they wouldn’t jell the jam. I used all strawberries and it made a pint of jam. Ummm good. 

Last Friday we added this precious child to the family. Lucy Harper, who weighed 6 lbs 8 oz. Mom Mindy and baby are home and doing well.

Our friends in Sutherlin will be happy to know that we went to Bino here at Jojoba Hills and lost! 

Life is good. The weather is beautiful and warm. God’s promises can be taken to the bank as they say. He keeps His word.

A recipe for refrigerator jam popped up on Facebook. It is so easy with no sugar and no pectin.

1 1/3 cup of strawberries
2/3 cup rhubarb
2 Tablespoons raw honey
2 Tablespoons Chia seeds (the seeds will jell)

Process all in a blender and refrigerate overnight.

If you want crunchy, add additional chopped fruit.

Wish I would have bought more strawberries at the Farmers Market. Oh, well, tomorrow I will be making banana bread out of the Costco bananas we bought that were green.
